In the early years, Statistics was defined by E. S. Pearson (1895-1980) as a scientific discipline concerned with collection, analysis, and interpretation of data obtained from observation or experiment. The more recent definition of Statistics was given by S. M. Ross (1943-Present) as the art of learning from the data. I personally do not see any difference between these two definitions rather they just expressed their understanding according to their time how statistics is being used. You may find many other definitions in the statistics literature.
I got a definition for statistics as well which I was teaching during my dream on a night between 9-12 August 2021.

All the definitions are similar. In simple words, we can say it is a scientific discipline to learn or investigate some natural events or scientific experiments using data. For example, you may be interested to learn about how the covid19 is spreading from one person to another, country to country. You can gather relevant data on the topic, analyse it and find some idea about how the spread has happened.
